Cheesy Chicken Pasta
This is a delicious pasta one-dish meal that tastes great and is very filling. It uses spaghetti noodles covered in a cheesy, creamy sauce with mixed vegetables and chicken. This is a meal that adults and children both can enjoy and a great base for a sit-down family meal. It goes well with garlic bread. If you elect to leave the mixed vegetables out, it also pairs well with steamed broccoli or green beans.

Ingredients
- 1 8 oz box spaghetti noodles
- 1 can cooking spray, butter flavor
- 1 10 oz can tomatoes with diced chilis
- 1 10 oz can cream of chicken mushroom soup
- 1 15 oz can mixed vegetables
- 8 oz block cheese spread, cubed
- 3-4 chicken breasts, boneless, skinless
- 1/2 tbsp seasoning salt, (if desired in chicken water)
Cheesy Chicken Pasta
- Preheat oven to 350 degrees.
- Cook spaghetti in boiling water until tender but firm. After it is done, spray with cooking spray to prevent sticking.
- Cook the chicken breasts in boiling water. Season with seasoning salt if desired. Cook until there is no pink left in the chicken. When done remove from heat, drain, cool, and shred.
- Combine can of soup, can of tomatoes, cheese cubes, and vegetables in a medium saucepan and heat over medium heat until the cheese cubes are melted.
- Spray a 9x13 casserole dish with cooking spray. Pour the spaghetti noodles in the casserole dish.
- Place the shredded chicken on top of the spaghetti noodles. Pour the cheese mixture on top of the pasta and chicken.
- Cook for approximately 20-25 minutes covered in aluminum foil until bubbly.
