My Love Affair With Chicken
As the title says, I love chicken. I have eaten chicken almost every way possible. I actually could eat chicken everyday. I said to my friend once, "you know every time I eat chicken it gets in my teeth, it doesn't happen with anything else." She said, "that's all you eat." Another friend that visited me from Atlanta said, once when she saw various and sundry ways chicken is prepared here in California, "a chicken doesn't have a chance here." I could actually say the same about my house, it has no chance here at all, because I've figured every possible way to prepare one.
I thought about writing this article, because I had just made up a new way to prepare chicken. So here goes.
My New Recipe
I actually don't have real measurements, and I don't think you need them. I prepared This dish in a conventional oven.
1 boneless, skinless chicken breast, red onion, cilantro, lemon pepper season, garlic salt, and butter
Wash, pat dry, and season meat. Wrap in a sheet of aluminum foil and bake in 375 preheated oven for about 45 minutes, depending on the size of the breast. Of course, I prepared this dish for one, but it can be made for an entire family.
Rose's Southern Fried Chicken
2 lbs. Of Chicken Parts
1 cup each, red wine Vinegar and Balsamic Vinegar
1 tbs. each, salt, red pepper, black pepper, garlic powder
3 tbs. Worcestershire Sauce
1 cup flour
3-4 cups of cooking oil
Wash chicken parts. In a medium bowl add all dry (except flour), ingredients. Mix in the vinegars and Worcestershire sauce. Place the chicken parts in the bowl and let marinate for several hours or overnight in the refrigerator. When ready to prepare, heat oil in large deep skillet until hot. Flour chicken pieces using a large plastic bag. Place chicken in hot oil, cook chicken until it floats to the top.
Chicken And Sausage Casserole
This is a dish that I used to make for my children when they were young. This is the basic recipe, you can add or subtract ingredients of your choice.
6 Chicken breasts
6 sweet Italian sausages
2 cans of Campbell's Chicken Mushroom soup
2 cups cooked rice
1 cup grated cheese ( of your choice)
1 onion (I prefer sweet red)
1 cup ripe olives (optional)
Seasonings of your choice
Season chicken to your liking, bake in large casserole dish until completely cooked. Saute sausage until thoroughly cooked, add onion, cook until tender. After all ingredients are cooked remove chicken from bone, cut into bite size pieces. Mix together chicken, sausage, onion, rice, soup, olives, and chicken drippings in mixing bowl. Return entire mixture to casserole dish used to cook chicken, sprinkle with grated cheese, place in 350 degree preheated oven for about 45 minutes.
Conclusion
These are just a few of my favorites. Oh believe me "I got a million of 'em." I'll be adding more as time goes on.
