Chicken and Goat Cheese Arugula Salad
Want a delicious yet healthy dish to add to your arsenal of daily
intakes? I think I could give you something that would offer the
benefits of multiple nutrients sure to give you a break from ordinary
eating.
This type of salad has a Mediterranean background and fuses
the qualities of balsamic vinaigrette with the freshness of arugula to
give you a texture and flavor to die for. Here is this simple recipe
I'm sure will make you want more and more:
Ingredients:
(Serves 4)
20 oz arugula
4 chicken breasts(fat removed)
1 bottle imported balsamic vinegarette(Italian or Greek)
14 oz Toasted almonds(slivered)
12 oz garlic croutons
1 lb. Goat cheese(crumbled)
1 lb. Fresh blueberries
6 oz vegetable oil
Preparation:
1). In a sauté pan, on medium heat add vegetable oil and allow to heat.
2). Slice chicken breast into thin slices, place into oil and let cook
until tender and juicy, a light toasty outside allowed.
3). After cooking has ended, place all other ingredients together
excluding chicken in a large bowl and mix together, taking note of
exactly how much balsamic vinegarette you want in your Salad.
4). Separate salad mix into four bowls, placing sliced chicken overtop
of each, and well, enjoy your salad.
