Easy Fourth of July Recipe
This is a great and easy recipe we love to share with the family on long, lazy weekends at the lake. It is easy and everyone can participate, even the toddler!!!!
We probably make this about every other week in the summer. It is so easy for mom. Dad does the grilling and all you need to do is cut up some veggies. Set them out with the wraps and let everyone serve themselves. This feeds a large crowd at eccomical prices and who can't use that now.
My husband especially likes black or red beans with onions along his fajita.
I have been able to find all my ingredients at Aldi's, even pre maid guacamole and spent less then $50!!!!! This truly is a CROWD PLEASER.!!!!!

The recipe for the Fajitas-Ingredients
- whole wheat fajitas
- bell pepper
- vidalia onion
- mexican cheese or blend of your favorite cheese, grated
- sour cream
- salsa
- black beans
- lettuce
- tomato
- chicken and/or beef for grill like tround steak]
- humus and quacamole if you like
- cilantro
Putting It All Together
Barbecue the meat . Cut into strips when done. ( you can buy pre-cut strips at most grocery stores)
Chop bell pepper, onion, cilantro, lettuce and tomato and avodado.
Cook beans till good and hot. I just open a can and heat them in the microwave, What could b easier and beans are a top health food. Chop a few onions and throw on top.
Warm fajita shells (Whole wheat fajita are available at large grocery chains)
You can either make guacamole or cut up avocados to add to your fajita. Pre maid guacamole is so easy to find and usually has healthy ingredients. Remember the fat in avocados in mono sat fat which your body actually needs and is heart friendly.
Grate your favorite cheese or purchase mexican pre grated cheese for ease.
This is usually cooked by the men of the house. Everyone, even preschoolers can stuff their own fajita shell.
Set out Humus, guacamole,salsa with cracker and chips to snack on while you prepare the meal.
Set all ingredients out and let each person make their own fajita with the toppings they like best.
Great with beer or margaritas!!!
Quacamole
To make quick guacamole just peel avocado, section with sharp knife and meat of avocado will peel right off. Mash well, add a little onion, garlic, cucumber and maybe some chopped tomato.
Tip
To keep your avocado fresh and stop it from turning brown add seed to cut up avocado and seal. Then refrigerate.
You can also prepare all your veggies ahead of time, put them in food storage bag or tupperware and when you are ready to grill set them out on a pretty platter.
