Recipe for a Rump and Potato Bake How to Make a Real Super Supper

The Origin Of This Meal

It was one of those days when you started out with a planned meal, when out of the blue, or should I actually say ominous grey clouds, along comes this totally unexpected obstacle which causes the entire meal plan to change.

What was planned was a Braai (BBQ), so the nice well matured rump was defroste, could not put that back into the fridge, for another day. Besides the heavens had only just opened up, not that I am complaning, we need the relief of a good presipiation, our annual rainfall figures are still down!

Be that as it may I would have to put on my thinking cap. So I raided the the fridge and came up with leanish pickings, no car with me today, so unable to nip out and get a few odds and ends. Besides I had the potatoes for the salad nearly boiled.

So here is what I came up with.

Ingredients

These are very basic and something that happened quite quickly.

Baby marrows six

six button mushrooms

an onion cut into small cubes

a medium sized carrot julienned

a teaspoon of powdered ginger

salt and pepper to taste

cayenne pepper to taste

4 potatoes

some chopped garlic to taste

paprika to taste

For a Light Salad

Tomato

Onion

Cucumber

Lemon Juice

Olive Oil

Salt & Pepper to taste

This Is How It's Done

Trimmed the rump of all that fat

The meat was fried on its own for several minutes then the sauted vegetables was added. The spices a bit of ginger garlic salt and pepper completed the cooking

Some butter was added to the baking dish, the potatoes went for a slicing and lined the baking dish

the meat mixture was placed on the potato layer covered with some more potato and garnished with paprika and cayenne pepper. Popped into the oven at 180 degrees

After being baked for twenty minutes there it was, it was served with a nice green salad

The Verdict

The meal was a success, the taste sensation terrific and the salad was only a light type of salad, sliced onion cucumber and tomato with a squeeze of lemon juice and a drizzle of olive oil.

This made a pleasant change from the usual, or some would say the traditional, fries (or chips), baked potato, mashed potato.
