Step by Step Corned Beef and Cabbage Dinner for St. Patrick's Day

One pot Corned beef dinner for 4
Ingredient list:
4 lb Corned beef with a spice packet
Water to cover
(Double spices if no spice packet is included with the corned beef)
4 bay leaves
2 Garlic cloves
1 tsp dry mustard
½ tsp dried thyme
2 tsp pepper, coarsely crushed, preferred but not required
½ TBSP salt
2 onions
3 large carrots
4 potatoes
1 medium green cabbage
Step 1 Prep beef
Place corned beef, including brine and spices from the package, into a large pot.
Add enough water to cover meat by 2 inches.
Bring to boil on high heat. This will create a foamy froth on top.
Step 2 Prep spices
While beef comes to a boil, prepare spices and combine in a small bowl.
Crumble the bay leaves
Chop garlic cloves coarsely
Measure and add mustard, thyme, pepper and salt
Step 3 Prep beef for spices
Once beef has reached a boil, lower heat to medium-low.
Skim off and discard froth with a slotted spoon.
Add a small amount of liquid from pot to mix in the bowl with the spices.
Stir until the spices no longer clump together.
Add spices to the pot, stirring until evenly distributed.
Step 4 Cook beef
Cover and simmer beef and spices for 2 hours (longer if using a larger piece of corned beef.*
Step 5 Prep vegetables while beef cooks
Peel the outer layer off the onions, then slice thickly.
Scrape the carrots with a knife and slice thickly,
Peel the potatoes and cut into eighths.
Remove the outer leaves of the cabbage. Cut the cabbage into quarters. Remove the hard inner core. Slice the cabbage into 1 inch strips.
Step 6 Add vegetables
About 30 minutes before beef is finished cooking, add vegetables.
Add more hot water to keep ingredients covered if needed.
Cook covered.
Step 7 Serve
Remove the beef, cover with aluminum foil to keep warm and allow to rest for 20 minutes.
Allow the vegetables to continue cooking if not cooked through while waiting on the beef. Otherwise turn off the heat and keep covered.
After resting the beef, cut into slices and arrange on platter with the vegetables around it. Top with some of the broth.
*Cook according to instructions on the package or until tender and can be pulled apart with a fork. This should be about 3 hours.
