Ingredients
- bagels or bagel thins, sliced
- cream cheese, soft
- red jelly, strawberry or raspberry
- dried blueberries
Instructions
- Fill a small plastic ziploc bag with red jelly and clip off the end of one bottom corner so you will be able to pipe the jelly out.
- Toast sliced bagels and let cool about 30 seconds.
- Spread plain cream cheese on top of bagels.
- Decorate with dried blueberries first to create a flag, stripes, or other design.
- Complete the decoration by piping the red jelly into stripes.
- Tip: Make sure your red jelly is smooth, without lumps of fruit.
- Tip: Use a blueberry bagel for an additional blue color and taste.

Making this elegant recipe is loads of fun if you set up a parfait-making station with a variety of foods to choose. Set up a "parfait buffet" and let the kids pick and prepare their own layers. We used a red and white tablecloth and set out small bowls and plates for the different mix-ins. Try some of these fun and healthy ingredients for your red, white, and blue parfaits:
- strawberries (sliced), blueberries, raspberries
- peaches, peeled and sliced
- vanilla Greek yogurt
- white pudding such as cheesecake flavor
- angel food cake, cubed
- dried fruit - blueberry, strawberry, cherry
- chopped nuts - walnuts, pecans, or peanuts
- crushed pretzels
- granola
Tips: Crushed pretzels are best as a crunchy topping only - they will get soggy otherwise. Tall clear glasses work best so kids can see the colorful layers. You may need a long spoon to reach the bottom!

What can be easier than chips and salsa for a healthy patriotic snack or appetizer? Blue corn tortilla chips are easy to find at the grocery store and look great mixed with some white tortilla chips. You can find bags of red, white and blue chips, but there are some children allergic to red dye if that is used to color the chips. I prefer to use the blue and white chips with the red salsa. A star-shaped dollop of sour cream in the center of the salsa brings the theme together. Use a star-shaped stencil to create the white star.
