Fruit Salsa Recipes:
Cool Summer Salsa
Ingredients:
- 2 fresh nectarines
- 2 cups of fresh strawberries, diced
- 2 kiwis
- 1 cup chopped watermelon (cut into very small pieces)
- 1 can mandarin oranges (15 ounces)
- 1 tablespoon of lime juice
Instructions:
Peel and dice the nectarines and kiwis. Slice the strawberries and then cut the slices in half. Drain the mandarin oranges. Combine all fruit in a large bowl, add the lime juice, and mix well. Cover and chill for at least an hour before serving.
Serving Suggestion:
This salsa tastes great served with stone ground wheat crackers. It's a terrific addition to a cheese and cracker appetizer tray. It also tastes delicious as a topping for fruit sherbet. Tropical Sweet and Spicy Salsa
Ingredients:
1 can of crushed pineapple (20 ounces)
- 1 fresh papaya
- 2 kiwis
- 1 red onion
- 2 jalapeno peppers
- 2 limes
Directions:
Place the crushed pineapple and the juice from the can in a medium bowl. Peel and dice the papaya, kiwis, and red onion. Remove seeds from the jalapeno and dice. Add the chopped papaya, kiwi, onion, and jalapeno to the pineapple. Squeeze the limes, add the juice to the fruit mixture, and mix well. Cover and chill for at least an hour before serving to allow the flavors to meld.
Serving suggestion: This tropical salsa tastes great as a dip for tortilla chips. It is also a great topping for fish or chicken that is marinated in tequila and lime sauce.
Pineapple Citrus Salsa
Ingredients:
- 1 can of crushed pineapple (20 ounces)
- 1 can mandarin orange segments (15 ounces)
- ΒΌ cup jarred jalapeno pepper slices
- 1 lime
- 1 teaspoon dried cilantro flakes
- 1/8 teaspoon cumin
Directions:
Place the crushed pineapple and the juice from the can into a medium bowl. Drain the mandarin orange segments and add them to the pineapple. Cut the jalapeno slices into fourths and add them to the fruit. Squeeze the juice from the lime into the fruit mixture. Add in the cilantro and cumin, and mix well. Cover and refrigerate for at least an hour before serving to allow the flavors to blend.
Serving suggestion: This citrus-y salsa is a great topping for grilled chicken. It's also a tasty tortilla chip dip.
