Potato Cheddar Soup Recipe
Ingredients:
- 2 stalks of celery
- 1 large onion
- 2 tablespoons butter
- 6 medium potatoes
- 3 carrots
- 2 cups of water
- 1 can of chicken broth (preferably reduced sodium)
- 1 tablespoon of chopped fresh parsley (or dried)
- 1/2 teaspoon of salt
- 1/2 teaspoon of salt
- 1/2 teaspoon of thyme
- 1/2 teaspoon of rosemary
- 1/4 teaspoon of garlic powder
- 2 cups of milk
- 1 cup of shredded cheddar cheese (sharp or mild)
Directions:
1. Melt the butter over medium heat in a stock pot or Dutch oven.
2. Chop the onion and slice the celery.
3. Sauté the onion and celery in the butter until tender.
4. Peel and cube the potatoes.
5. Slice the carrots.
6. Add all ingredients except for the milk and cheddar cheese.
7. Simmer for 30 minutes, or until vegetables are tender.
8. Remove from heat.
9. Use a potato masher to mash vegetables.
10. Add milk and cheese.
11. Return to medium heat.
12. Cook, stirring constantly until cheese melts.
Serving Suggestion: Serve as an appetizer or an entrée soup. It tastes great with a green salad and crackers as a main dish. It is a good first course selection for just about any meal occasion.
