Delicious Curried Coconut Almond Soup

Curried coconut almond soup combines the spicy flavor of curry with yellow peas, flaked coconut, and almonds for a savory and satisfying luncheon or dinner dish.

Yellow peas have been a longstanding favorite for homemade soup. And with good reason. They lend flavor and texture to hearty homemade soups.

Curried coconut almond soup combines yellow splits with chicken broth, butter and cream for a rich tasting soup, enhanced with exotic hints of coconut and almonds.

Curried Coconut Almond Soup

Place all ingredients into a crock pot and cook until thickened

  • 2 cans chicken broth
  • 2 cans of water
  • 2 cups yellow splits
  • 1 tsp. dried garlic
  • 1 medium chopped onion
  • 6 tsp. curry powder
  • 1/2 tsp. salt
  • 1 tsp. nutmeg

Add

  • 1/4 cup butter
  • 1/2 cup flaked sweetened coconut
  • 1/4 cup rinsed white rice

Continue cooking soup until thickened, then add

  • 1/2 cup chopped or slivered almonds
  • 1/2-1 cup cereal cream

Ladel your curried cocounut almond soup into bowls and top with slivered almonds.

This is a rich-tasting soup that has satisfacion written all over it.
