A Recipe for Shrimp Pasta Spinach Delight

Ah, shrimp and pasta. I love this combination; it never fails to result in
a delicious meal. This dish is made even better with spinach to give it
that great earthy taste. This shrimp pasta spinach recipe will teach
you how to make this dish, complete with ingredients and instructions.

Shrimp Pasta Spinach Delight Ingredients

This shrimp pasta spinach recipe uses many ingredients that you may
already have in your kitchen. The ones that you are missing can be
found in your local supermarket. Feel free to make substitutions as
you see fit. If you do not like an item, just find something you think is
similar and replace it. For example, if you want this dish to be a bit
sweeter than usual, replace the lemon juice with lime juice. Also,
if you do not want the red pepper flakes, you can leave them out – they
are not required. And as always, you can substitute nonalcoholic white
wine for the white wine in the recipe.

For this shrimp pasta spinach dish, you will need the following ingredients:

- 12 ounces of penne pasta (feel free to use other types as you desire)
- 2 ¼ tablespoons of olive oil (extra virgin)
- 6 tablespoons of fresh basil, chopped
- 3 tablespoons of lemon juice
- ½ cup of white wine (dry and not too sweet)
- 1 pound of uncooked shrimp
- 2 teaspoons of lemon peel, grated
- 5 cups of baby spinach leaves
- 1/8 teaspoon of crushed red pepper flakes
- 3 minced cloves of garlic
- 6 large plum tomatoes
- 1 tablespoon of oregano
- Salt and pepper (or lemon salt)

Before you begin cooking, you will need to peel the shrimp and remove
the veins from them. Also, slice your tomatoes into thin wedges,
which will make it easier for you during the preparation. And as
mentioned, of course, you can use other types of pasta. If you do
not like penne pasta, ziti works fine as well.

Shrimp Pasta Spinach Delight Preparation

You will need to first put on a pot of salted water and bring it to a boil.
When you have a nice rolling boil, place your pasta in and cook until
it is tender yet not overly slippery. At this time, take a ladle full of the
liquid in the pot and place it in a bowl for later. Drain the pasta and
place it back in a covered pot to keep it warm.

While your pasta is cooking (it will take 9-10 minutes), heat up the
olive oil in a skillet. Take salt and pepper (or lemon salt if you wish)
and place the shrimp in the pan. Add the garlic at this time too,
and saute both for around 2 minutes. Next, take the grated lemon peel,
basil, lemon juice, and tomatoes to the mixture and saute it until the
shrimp are completely cooked. You will know they are ready when
they turn opaque. At this time, lower the heat, add the white wine,
and allow the dish to simmer until you reduce the sauce. Around this
time, your pasta should be finished cooking, if you prepared the
ingredients while the pasta was boiling. Toss the spinach leaves
into the pot after you have drained the pasta and toss the pasta
until the spinach has gotten soft and wilted. At this time, include
the shrimp mixture and toss the entire dish together. If the noodles
are sticking, pour in enough of the pasta liquid you kept from earlier
to give it a little bit of moisture.

Before serving, you can add the red pepper flakes if you wish.
You can also add cheese at this point. If you do, I recommend
keeping it fairly light, with Parmesan. If you really like cheese, though,
try a Parmesan and Romano cheese blend.

Sounds delicious! We do something similar but the addition of spinach would boost the flavor and nutrition. With seafood, we generally skip the cheese. Thanks for the recipe.
