As the weather starts to turn chilly, it's only natural to crave warm, comforting foods like tomato soup. On a cold fall or winter evening, there's not much that tastes better or is more satisfying than a hot bowl of hearty homeade soup paired with a grilled cheese sandwich.

Tomato soup is not difficult to make at all – in fact it's one of the easiest and fastest homemade soup recipes to prepare. There are several different ways to make tomato soup. If you like onions, you'll likely find that this simple recipe for Tomato & Onion Soup quickly becomes a favorite in your household.

Easy Homemade Tomato & Onion Soup Recipe

Ingredients

  • 2 large onions
  • 1 clove of minced garlic
  • 1 tablespoon diced fresh parsley
  • 2 tablespoons of unsalted butter
  • 1 been bullion cube
  • 2 tablespoons of lemon juice (fresh or bottled)
  • 1 can of tomato juice (your favorite brand; use the 46 ounce size)
  • 1 tablespoon of brown sugar (or Brown Sugar Twin)
  • ½ teaspoon of dried crushed basil

Cooking Instructions

Peel the onions and cut into thin slices. Place a stock pot or large saucepan on medium high heat and add the butter. Once the butter is melted, add the onions, garlic, and parsley and sauté them until the parsley and garlic are soft and the onions have reached a crisp-tender consistency.

When the onions and garlic are ready, add the bullion cube, lemon juice, tomato juice, brown sugar (or Brown Sugar Twin), and basil to the mixture, stirring to thoroughly combine all ingredients.

Turn up the heat to high and bring the mixture to a boil. Once the soup mixture reaches a boil, reduce the heat to medium and allow to simmer for 15 minutes, stirring occasionally.

Spoon into bowls and enjoy! This recipe makes 4 generous servings.
