Hearty Fall Soup Recipes
As the weather turns cool and crisp each autumn, people tend to start craving soup. Many people refer to fall as soup weather. In my house, we enjoy a variety of soups year round, but we do enjoy soup with greater frequency during the colder months of the year.
Some of my favorite soup recipes include:
Simple Shrimp and Corn Chowder
- 2 pounds boiled shrimp, peeled
- 2 cans whole new potatoes, cubed
- 1/4 cup Hormel Real Bacon pieces
- 1 cup milk
- 1 can of creamed corn
- 1 can of whole kernel corn, drained
Combine all ingredients in a Dutch oven or other large pot and simmer for approximately thirty minutes, until thoroughly heated. Garnish with additional bacon pieces and/or shredded cheddar cheese if desired. This main dish soup is perfect served with either crackers or a crusty French bread.
Note: For the bacon, you can cook and crumble your own bacon instead of Hormel Real Bacon pieces if you prefer. You may also use fresh cooked cubed potatoes if you prefer them to the canned variety.
Spice Variation: If you prefer spicy chowder, add a dash of Tabasco, crab boil, or cayenne pepper to the stock pot while the soup is heating.
Variation: Instead of shrimp, try substituting chopped ham in this recipe. When making the ham version, cornbread muffins make an excellent accompaniment.
- 2 cans Rotel tomatoes
- 1/2 cup water
- 2 tablespoons of taco seasoning mix
- 1 can whole kernel corn
- 1 can chopped green chilies
- Tortilla chips
- Shredded cheddar cheese
Combine all ingredients except the tortilla chips and shredded cheddar cheese in a Dutch oven or stock pot. Simmer over a medium and simmer approximately 30 minutes, or until thoroughly heated.
Spoon into bowls and top each serving with a generous portion of shredded cheddar cheese and broken tortilla chips. This soup is delicious by itself or with additional tortilla chips. It is a great accompaniment for a taco dinner.
Main Dish Variation: If you plan to use this soup as a one dish meal, you may want to add in some protein. Try adding a can of drained kidney beans and cooked ground beef prepared with additional taco seasoning. If you would like the base of the soup itself to be richer, try adding in a can of cream of cheddar soup to the other ingredients before simmering.
