I love cool crisp salads in the summer. Nothing screams summer quite like fresh watermelon! Watermelon salad is a light healthy treat when created with the freshest ingredients and served over your favorite greens. You may even be able to convince your children to try out this salad! It's that good. What kid doesn't love watermelon? And you can sneak a few greens into their meal in the process!

Watermelon is packed with antioxidants and a delicious source of Vitamin C, A and multiple B Vitamins which are essential to your health. It is also a good source of potassium and magnesium and concentrated source of the carotenoid, lycopene.

Ingredients for Watermelon Salad:

  • 1/2 cup chopped red onion
  • 4 cups watermelon, cubed
  • 1/4 cups pitted olives
  • 3 tablespoons fresh lime juice
  • 1/4 cup finely chopped fresh mint
  • 1/2 cup / 2 ounces feta cheese, crumbled
  • 1/4 cup fresh parsley, finely chopped
  • Fresh greens (optional)

Now you are ready to create your colorful watermelon salad! This recipe yields approximately 12 servings with only 2 grams of fat per serving.

Combine the red oinion with the fresh lime juice in a medium sized bowl and allow it to stand for 10-15 minutes. Add the watermelon, olives, parsley and mint. Cover and chill for at least 1 hour. Sprinkle your watermelon sald with cheese and serve. If you prefer to make your salad into a meal, serve the watermelon salad over your favorite greens.

wonderful idea! I still laugh at a neighbor's child for mistaking the regular red tomatoes in a salad as watermelon - his mother always made watermelon salads at home....LOL
