Do you like pork roast? I love it so much. And if you have tons of pork roast, even if you have a "killer" pork roast's recipe, sometime you just don't have any idea what to do with that leftover.
Make it as sandwich's filling is a very common way to use the pork roast leftover, add some tomatoes sauce or chili sauce, tomatoes, yellow onion, cucumber, and any other vegetables and you have your lunch.
But there are some other ideas to use the pork leftover.

1. Pork Soy Sauce with leftover pork roast
It depends on the amount of pork roast leftover. Try this, chop the pork roast into 1 cubes, chop some garlic, 1 star anise or 1 tbsp five star spices, sweet soy sauce, chicken stock, salt and pepper. Add some Shitake mushroom if you like.
Heat the skillet, add some cooking oil, add garlic, pork roast, add the five star spices, chicken stock, simmer in low heat. Add sweet soy sauce, salt and pepper. Cook until tender. Serve with rice or toast.
If you like Shitake mushroom, soak it in the warm water until tender and add it to the skillet.

2. Pork Salad with leftover pork roast

Ingredients
Pork roast, thinly sliced
1 cucumber, thinly sliced
2 boiled eggs cut

Blend :
2 pcs garlic
3 pcs red chili, seeded
1/2 tsp salt
1/2 tbsp sugar

Direction :
1. Mix all the spices, add pork roast. Stir well.
2. Arrange cucumber, pork roast and boiled eggs on a plate, add the dressing spices.
You may add some roast walnut or roast almond on top of it, or you have some chips? I think it's great too.

3. Roast Pork Spring Roll

Ingredients :
1 tbsp cooking oil or vegetable oil
Pork roast, finely chop
2 cloves garlic, crushed
4 red onions, crushed
1 can bamboo shoots or some vegetables like green cabbage, thinly sliced
1/2 cup minced carrots
1 cup of chicken stock
1 egg, beat
1 shallot, thinly sliced
1 tsp salt
1 tsp pepper
1 tsp sweet soy sauce
20 spring roll wrappers

To seal the rolls, mix :
2 tbsp starch flour
1 tbsp water

Direction
1. Heat some cooking oil, add garlic, onions, salt and pepper. Stir well
2. Add bamboo shoots, vegetables, and pork roast, cook until tender.
3. Add the chicken stock, sweet soy sauce, cook until the chicken stock absorbed.
4. Add the egg, stir well. Remove from heat, set aside until cool enough.
5. Place three heaping tablespoons of the filling diagonally near one corner of each wrapper, leaving a 1 1/2 inch space at both ends. Fold the side along the length of the filling over the filling, tuck in both ends, and roll neatly. Keep the roll tight as you assemble. Moisten the other side of the wrapper with starch flour mix to seal the edge.
6. Heat a heavy skillet over medium heat, add oil to 1/2 inch depth, and heat for 5 minutes. Slide 3 or 4 spring rolls into the oil. Fry the rolls for 1 to 2 minutes, until all sides are golden brown. Drain on paper towels. Serve immediately.

4. Add to noodles or ramen
This is also very common and easy to do. Just add some pork roast into your Chinese noodles and it will make the noodle tastes better. Add some veggie too. Like green beans or spinach.

I used to make it too, and it's pretty easy.

2 cloves garlic
5 red onions
2 red chili, seeded (if you're not like hot taste, don't add it)
1 tomato, thinly sliced
1 egg, beat, make omelete from it and thinly sliced, or you want to make a scramble, just feel free to do it.
1 tbsp sweet soy sauce
1 tbsp salty soy sauce

4. Add pork roast, salt and pepper. Stir well.
5. Serve with sliced omelete, add sliced cucumber if you like, or some chips and pickles.

7. Add in a porridge
You may make rice porridge or wheat porridge and add some pork roast leftover as topping. Add some shallots, fried onions, and chips.

8. Mix Vegetables stir fry with pork roast leftover
Ingredients
All vegetables you have on hand, like green mustard, cabbage, carrot, broccoli, green beans, mushrooms, etc

Pork roast
Boiled chicken breast, cut dice
1 egg
2 tbsp cooking oil
Salt and pepper

Starch flour mix to thicken

Direction :

1. Heat oil, saute garlic until fragrant.
2. Add pork roast, boiled chicken breast and whatever you have like meat balls or even prawn.
3. Add chicken stock, cook until boiled.
4. Add vegetables.
5. Add the starch flour mix.
6. Enter pepper, salt, and soy sauce. Add some sugar if you like to make the taste even better.
7. Cook until the sauce is thick enough. Serve hot with cooked rice, steamed mantau, fried mantau, toast, or baked potatoes.

You may add pork roast leftover in your own favorite dishes and it will make your dishes taste different. Just use your imagination in describing the taste, good luck.
