I love fish, any kind of fish and the red snapper is always my favorite. I used to enjoy red snapper head as red snapper spicy soup. But this time there is a more simple and easy red snapper recipe.

For the sour taste, you may use vinegar or pineapple.

Sweet and Sour Red Snapper

Ingredients :

300 gr red snapper fillet, cut diced
50 gr starch
1 egg, beat
2 ts lemon juice
Pepper and salt
Oil to fry

Sweet and Sour Sauce :

1 big red chili, remove the seed and sliced thin
1 garlic
3 cm ginger
50 ml tomato sauce
100 ml water
1 ts starch
1 ts vinegar
or
100 gr pineapple, slice
1 tsp sugar
salt

First, marinate the fish with salt, pepper, and lemon juice.

Leave that until about 30 minutes.

Mix the starch with beaten egg, add a little water to moderately thick, add salt. Stir well.

Heat oil in the skillet for deep frying with medium high heat.

Dip the fish one by one into the batter flour and fry until the color turn golden.

Remove the fish, drain and serve with the sweet and sour sauce.

For Sweet and Sour Sauce,

Grind (I used to grind my herbs on a stone ^_^) or put the chili, onion, and ginger in the food processor. Mix with tomato sauce, water, vinegar or pineapple, salt and sugar. Simmer over low heat.

Mix the starch or you may use corn flour with a little bit water and enter into the sauce until thick. Lift, serve with the fish.

Additional Notes :

Beside Red Snapper, you may use any kind of your favorite fish. I love to change the red snapper with carp fish too. For the sweet and sour sauce, you may add some vegetables if you like it, like cucumber and carrots. Or add Onions and

Feel free to create your own easy and delicious recipe.
