As manager for a restaurant you are hiring several new employees. What governmental standards, laws, and regulations do you need to follow?
Every city, county and state have their own regulations. You should have copies of those regulations in the restaurant already. If they are not there it is the responsibility of the business owner to provide you with these.
If that is not possible I suggest you start with the state or city health department. Most likely they do health inspections and actual visits to the restaurant.
These days, having Google and other search engines should allow you to locate on line copies of the regulations you should be following for your area.

The basic requirement is not to take in children to work in the restaurant. Check with the local body and you will get a list of all the do's and don'ts for hiring new people.
