4 Vegetable Casserole Recipes for Any Occasion

Creamed Spinach Casserole

Ingredients:

  • 2 boxes of frozen chopped spinach (10 ounces each)
  • 1 small onion, diced (yellow, red, or white)
  • 2/3 cup of grated cheddar cheese
  • 1/4 teaspoon of nutmeg
  • 1 package of cream cheese (8 ounces)
  • 1/2 cup of milk

Directions:

Preheat oven to 350 degrees. Cook spinach according to package directions. Place in an 8 X 8 baking dish. Soften cream cheese and mix with nutmeg, onions, and milk. Add to baking dish with spinach. Top with cheddar cheese and bake for 20 minutes or until thoroughly heated.

Spinach and Bacon Casserole

Ingredients:

  • 2 boxes of frozen chopped spinach (10 ounces each)
  • 1/4 teaspoon of nutmeg
  • 1 carton of sour cream (regular or reduced fat; do not use fat free)
  • 1 cup of grated cheddar cheese
  • 6 strips of bacon, cooked and crumbled

Directions:

Preheat oven to 350 degrees. Cook spinach according to package directions. Place in an 8 X 8 baking dish. Stir in nutmeg. Spread sour cream over the spinach in an even layer. Sprinkle crumbled bacon over the sour cream. Top with grated cheese. Bake for 30 minutes or until hot and bubbly.

Peas and Carrots Casserole Recipe

Ingredients

  • 1 can of sliced carrots
  • 1 can of English peas
  • 1 jar of button mushrooms
  • 1 can of cream of mushroom soup
  • 1/3 cup of bread crumbs

Directions:

Preheat oven to 350 degrees. Spray an 8 X 8 baking dish with nonstick cooking spray. Place the cream of mushroom soup on the pan. Drain carrots, English peas, and mushrooms. Add them to the pan and stir gently. Top with the bread crumbs and bake for 30 minutes, or until heated through.

Mixed Vegetable Casserole

Ingredients:

2 cans of Veg-all

  • 2 individuals stalks of celery, diced
  • 1 small onion, diced (yellow, red, or white)
  • 1/2 cup mayonnaise
  • 1/2 cup of plain, nonfat yogurt
  • 1 cup of grated cheddar cheese
  • 1/3 cup of bread crumbs

Directions:

Preheat oven to 350 degrees. Spray a 9 X 13 baking dish with nonstick cooking spray. Drain the Veg-all, and place everything except the bread crumbs in the pan. Mix well and top with bread crumbs. Bake for 30 minutes, or until hot and bubbly.
