If you are a parent and cook at home daily, it's not always easy to think of what to cook.When I had a store, customers, mostly mothers, would come in and look around the store for inspiration, when I asked them if they needed help, they would say in frustration, that they had no idea of what to cook anymore. I gladly gave them some suggestions, and made sure that I had some recipe books handy, that they could look through. Having to prepare a delicious, healthy meal for your family, everyday, can sometimes get frustrating. Just the other day, I bumped into a friend at the market, he is a stay at home dad, and does most of the cooking at home . He was also stumped at what to cook. I suggested my chicken goulash recipe, which is my girlfriends favorite dish. He called the next day to say that it was quite easy to prepare, and the wife and kids enjoyed it.
1. Chicken Goulash
This is a traditional goulash recipe. It is easy to make. A dish that everyone will enjoy.
Ingredients
- 1 Chicken, Cut to 8
- 4 large Onions, Cut to small cubes
- 1 large Tomato, Cut to 4
- I liter Chicken stock or Water
- 1/2 a cup White wine
- 1/2 a tsp Paprika powder
- 3 tbsp Thick tomato past
- 3 tbsp Olive oil
- Salt and Pepper, to taste
Method
- Heat a large pot and add olive oil
- Add onions, cook until onions are a good medium brown
- Add the chicken and cook for 5 minutes
- Add paprika and stir well
- Add wine, mix well
- Add tomato
- Add chicken stock or water
- Add salt and pepper to taste
- cook for 30 minutes or until chicken is cooked and stock has reduced.
- Add tomato past to thicken the sauce
- Simmer for 5 minutes
- This is a classic chicken goulash, if you like to , you can add, baby carrots and potatoes or button mushrooms.
2. Chicken Stew
This is a recipe for chicken stew that I ate very often while I was growing up.
How To Cut a whole Chicken into 8 pieces
Ingredients
1. 1 chicken cut to 8
2. 2 onions diced
3. 5 carrots cubed
4. 4 potatoes cubed
5. 1 green capsicum cut to cubes
6. 2 tomatoes quartered
7. Half a cup of Parsley leaves
8. About 1 liter water
9. 1 tbsp thick tomato past
10. Salt and pepper to taste
11. 3 dried bay leaves
12.1 tsp paprika powder
13. 1 tbsp flour
14. 2 tbsp butter
15. 2 tbsp olive oil
Method
1. In a large pot add olive oil and onions, cook until onions are browned
2. Add chicken
3. Add enough water to cover the chicken,
4. Add bay leaves,
5. Cook for 20 minutes or until chicken is almost done.
6. Add carrots, potato, capsicums,tomato, parsley
7. cook for 15 minutes or until vegetables are almost done
8. Add tomato paste
9. In a pan melt butter and add flour, cook on low heat stirring continuously until light brown, it will only take a couple of minutes.
10.Add paprika powder and stir for 1 minute,
11. Add one cup of water into the flour and whisk ,pour the mixture into the stew and cook for five minutes until the stew thickens
Serve with a good crusty bread
3. The Best Fried Chicken
This is a delicious fried chicken recipe. Great for picnics.
The Best Fried Chicken
Ingredients
1. 1 chicken cut to 8
2. 1 cup flour
3. 3 eggs
4. 1 cup Japanese bread crumbs
5. Salt and pepper to taste
6. 1 cup oil for frying
Method
1. In a large bowl mix eggs salt and pepper.
2. Put flour in a plate
3. Put the breadcrumbs in another plate
4. take one piece of chicken and roll it into the flour, making sure the chicken is well covered
5. then roll that same piece of chicken in the egg mixture
6. next roll the chicken into the breadcrumbs making sure that the chicken is well covered, the egg mixture helps the breadcrumbs stick nicely to the chicken.
7. Repeat until all chicken pieces are done
8. In a large frying pan heat oil
9. Fry the chicken on medium heat for 10 minutes on each side, or until chicken is done.The chicken should be a light golden brown.
4. Chicken Breast with Rosemary
This Chicken recipe goes well with a light salad, some mashed or roast potato, or a simple pasta, buttered rice or steamed vegetables.
Pan Fried Chicken with Rosemary
Ingredients
1. 4 chicken breasts
2. 1 tbsp chopped Fresh Rosemary
3. 3 garlic cloves chopped
4. Juice of 1 lemon
5. Salt ( optional )
6. A pinch of crushed pepper
7.. Olive oil
Method
1. In a large bowl put chicken, rosemary, salt, pepper, garlic, lemon juice and drizzle a little olive oil on it.
2. Mix well and leave on the side for 10 minutes
3. In a pan, heat olive oil
4. Add chicken breast and cook on medium heat for about 6 minutes on each side or until chicken is done.

1. 1 chicken cut to 8
2. 1 large onion cut to small cubes
3. 5 mid carrots cut to slices
4. 2 white carrot cut to slices
5. 50 g celery cut to slices
6. 1 large tomato cut to 4
7. half a cup of parsley leaves
8. 3 tbsp olive oil
9. 1 chicken cube
10. Salt and pepper to taste
11. 1 & 1/2 liters water
Method
1. In a large pot, heat up the olive oil
2. Add chopped onions, cook until onions are light brown
3. Add the chicken and cook for 5 minutes
4. Add water and one chicken cube, boil for 30 minutes or until chicken is almost cooked
5. Add the rest of the vegetables, salt and pepper to taste
6. Cook until the vegetables are done.
