Pumpkin isn't just for carving!

When you think of pumpkins you may only think of them carved into ghoulish faces as Halloween decorations, but they are a really tasty and versatile vegetable which are great during the winter season. And nothing says winter more to me than a hearty soup! All good root vegetables will make a tasty soup and pumpkin is no different, but sometimes plain root veggie soups can be a little bland, that's when I turn to the internet to find something a little different.

The internet is full of millions of recipes, but I have searched through lots of these to bring you, what I think, are 5 of the best pumpkin soup recipes, that I can't wait to try this winter. There is something to suit all tastes! Something a little sweet, something a little spicy and something really rich and hearty.

1. Bacon and Apple Pumpkin Soup

I found this amazing soup recipe on a site aptly names AmazingSoupRecipes.com (link under image). The idea of salty bacon pieces on sweet apple and pumpkin soup just sounds so delicious! The ingredients are pretty simple (except liquid smoke! But it can probably be made without it!) so you should be able to get most of them locally. This recipe uses a white pumpkin but the chef says you can just as easily use a traditional orange one, but the smaller white ones are a little sweeter.

It takes less than 45 minutes in total to cook so would make a great tasty lunch time meal or a perfect started to a winter warmer meal.

This was a recipe I found on a brilliant cooking site by Heather Christo (link under image). Now pumpkin soups don't usually include meat in them - they are usually totally veggie (or only include chicken stock) - so when I saw this recipe with chicken breast included it just sounded too tasty not to check out. And I'm glad I did now, it looks amazing, and really simple to make. I can imagine it bursting with flavour and being seriously tasty. The 3 tsp of curry powder may be a little hot for some but it could be easily altered to make it milder if you would rather.

I stumbled across this recipe on a blog called Spicie Foodie which is written by a great cook called Nancy. All her recipes are her own creations, and I want to try out so many of them, they sound amazing so please check out her site for other recipes. But this pumpkin soup especially caught my eye. I adore sweet red peppers so the thought of them with pumpkins sounds like a winner to me! What is great about this recipe is that it can be served hot or cold, if you would rather a chilled soup before a heavier meal. It is simple, uses whole foods and is even vegan friendly. The image of this soup is the first thing that grabbed my attention, I mean seriously it looks so yummy doesn't it. I found this soup recipe on a brilliant site called Simple Bites! (link under image) Written by blogger Aimee. Between the beautiful photos you will find some great wholesome and tasty family recipes for a range of dishes (not just soup!). I have recently discovered how tasty Kale is, so was really pleased to find a pumpkin recipe which included it.

This soup just sounded like the most amazing winter time dish! Pumpkins are very autumnal, and chestnuts are the epitome of winter foods! Just the smell of roasted chestnuts makes me think of Christmas! So both pumpkin and chestnuts in one recipe sounds like a perfect combination. And this recipe comes from the queen of the kitchen (and the home in general) Martha Stewart, so it will no doubt be divine! You can find the full recipe on the link under the image. It's a really simple recipe, which I just can't wait to try.
