Open Sandwich

Ingredients Required:

  1. Hung curd-1cup
  2. Carrot,Grated-2tbspn
  3. Cabbage,Grated-2tbspn
  4. Capsicum,Chopped-2tbspn
  5. Salt-to taste
  6. Pepper-1tspn
  7. Toasted bread slices-2ns

Making Method:

  • Mix the hung curd along with grated carrot,cabbage,capsicum,salt and pepper.
  • Take toasted bread, spread the mixture on it.
  • Cut in to triangles and serve.


Potato and Corn Cutlets

Ingredients Required:

  1. Potatoes,boiled-1/2kg
  2. Corn,boiled-1cup
  3. Green chillies,finely chopped-2-3ns
  4. Grated cheese-1/2cup
  5. Coriander leaves,finely chopped-1/2cup
  6. Salt-to taste.

Making Method:

  • Mash boiled potatoes,to it add boiled corn,grated cheese,green chillies,fresh coriander leaves and salt.
  • Shape into round cutlets,Heat oil in a non-stick pan and fry on both sides till turns brown.

Corn Bhel

Ingredients Required:

  1. Potato-1ns
  2. Tomato,chopped-1ns
  3. Onion,chopped-1ns
  4. Corn kernels,boiled-2cups
  5. Green chillies,finely chopped-2ns
  6. Salt-to taste
  7. Lemon juice-to taste
  8. Coriander leaves and sev -to decorate.

Making Method:

  • Boil potato and cut to square pieces.
  • Mix all the ingredients together, add the lemon juice and salt to taste.
  • Put in a bowl and top with sev and coriander leaves.


Baked Stuffed Eggs

Ingredients Required:

  1. Boiled eggs-6ns
  2. Skimmed milk-11/2 Cup
  3. Flour-2tspn
  4. Mushrooms,Chopped-1/2cup
  5. Onion,chopped-1ns
  6. Capsicum,chopped-1ns
  7. Salt and pepper-to taste.

Making Method:

  • Slice eggs into halves and discard yolks.
  • Mix the flour ,milk and boil it.Add mushrooms,capsicum,onions,salt and pepper.
  • Cook this mixture till it thickens.
  • Stuff this mixture in the egg whites.
  • Spray some oil over it and sprinkle little black pepper on top.
  • Serve hot.


Cold Quinoa Salad

Ingredients Required:

  1. Cooked Quinoa-1cup
  2. Channa,boiled-1/2cup
  3. Celery stalks,finely chopped-2ns
  4. Capsicum and Cucumber,chopped-1/2cup

For Dressing:

  1. Olive oil-1/2tspn
  2. Balsamic vinegar-1tspn
  3. Paprika-1/2tspn
  4. salt and pepper-to taste
  5. Lemon juice-1ns

Making Method:

  • MIx the dressing ingredients in a seperate bowl and toss with the salad ingredients.
  • Refrigerate for 20 minutes .serve chilled.

      All of these would make healthy and easy lunches. I have to say, I wasn't familiar with the term "capsicum" so I had to look it up. Peppers! Meaning I have most of the ingredients for these recipes already on hand. Thanks for sharing.

      All these foods look delicious. I like the Cold Quinoa Salad recipe most. Can I use any kind of vegetable oil in stead of Olive Oil?
