A Great Chicken Recipe
This is one of those crock-pot dishes that I have put together so often that I had to make an effort to give you a recipe. It can also be done on the stovetop. This will feed a small crowd or a few hearty eaters.
You will need:
2 1/2-3 lbs of skinless chicken, deboned and chopped into bite size pieces
1 large onion-chopped
1 small bell pepper-chopped
1 teaspoon minced garlic
1 14.5 oz can of rotel or a can of tomatoes with green chillies
2 1/2 cups of shredded cheddar cheese
Combine all ingredients except the cheeses, and cook on a low heat until the chicken has cooked and all flavors have blended. When you determine that the chicken is done, turn the heat up and bring to a simmer , just under the boiling point, and stir in cheese until melted. Turn off the heat.
Spoon mixture over tortilla chips, and garnish with sour cream.
