A Great Chicken Recipe

This is one of those crock-pot dishes that I have put together so often that I had to make an effort to give you a recipe. It can also be done on the stovetop. This will feed a small crowd or a few hearty eaters.

You will need:

2 1/2-3 lbs of  skinless chicken, deboned and chopped into bite size pieces

1 large onion-chopped

1 small bell pepper-chopped

1 teaspoon minced garlic

1 14.5 oz can of rotel or a can of tomatoes with green chillies

2 1/2 cups of shredded cheddar cheese

Combine all ingredients except the cheeses, and cook on a low heat until the chicken has cooked and all flavors have blended. When you determine that the chicken is done, turn the heat up and bring to a simmer , just under the boiling point, and stir in cheese until melted. Turn off the heat.

Spoon mixture over tortilla chips, and garnish with sour cream.

      You must have been hungry to be in the recipes! It's pretty good eating, if you like spicy foods, which I do.

      Football night would be awesome.....just a step above finger food. Make it a dip, instead of pouring it on over the chips.

      I apologize MobyWho, it is a brand name of tomatoes with chilli peppers and other spices. You can get off name brands or easily make your own. But at $1.00 to $1.25 a can, it is just so convenient to grab a can of "Rotel Tomatoes".

      It makes a great dip when you melt Velveeta cheese into it.
