A Great Throw-Together-Quick Soup
My Granddaughter's Favorite
Years ago, when I was struggling and had very little in my cupboard, I came up with this soup recipe. It takes about 5 to 10 minutes to throw together and it is one of my granddaughter's favorite now. When I serve it, together with all the trimmings, friends think this is a gourmet soup. It's my own version of "Taco Soup", and here are the list of ingredients: Two cans of cream of chicken soup (you can also use one can cream of chicken and one can cream of celery if you wish), one can of chicken chunks (I like the white meat), one can of pinto beans, one can of corn, and 1/2 package of taco seasoning --you will also need to add milk and water--one soup can full of each. If you don't have milk, you can just use water instead. This is really a family-size recipe, so you could use less of everything if you are only cooking for one person.
Throwing It Together
I use a large pan and add the canned soup first and use a whisk to blend the milk and water in, then add the taco seasoning and mix well. After that, all you do is stir in the beans, corn and chicken and heat---even the worst of cooks can't ruin this recipe! If you like, and my granddaughter does, you can top off the soup with grated cheese, sour cream or crushed nacho chips, or all of the above. This is also a great meal for a camping trip, as all the ingredients (except for the milk) don't need any refrigeration and are easy to pack or store.
