Great Summer Salad!
Here's a wonderfully light and zesty summer salad that offers a great change of pace to your lunch or dinner menus. It is quite quick and easy to prepare, and goes well with many different kinds of entrées.
Start with roughly equivalent volumes of fresh cucumbers, onions of your preference (I like Vidalias), and ripe tomatoes. Also gather red wine vinegar, extra virgin olive oil (cold pressed), salt and pepper. (You may also want to try adding other seasonings of your choice, such as crushed garlic, a bit of chopped parsley, lemon juice, or perhaps chopped chive.) For a satisfyingly crisp and crunchy taste and texture, chill the main ingredients in advance.
Clean and chop your cucumbers, onions and tomatoes into bite-size pieces, and toss all three ingredients together in your favorite large salad bowl. Drizzle a small portion of olive oil over the mixture, then follow it with roughly twice as much red wine vinegar. Sprinkle with a moderate amount of salt and a few dashes of pepper. Add any of your other desired seasonings and adjust to taste.
Toss well, and set aside for 10 minutes or more (preferably chilled). This allows all of the various flavors to blend and interact. Toss the salad once more before serving.
