Pork Adobo
This dish was sent to me by my Philipino friend Ms. Mariz Buhalog. This is one of her favourite recipe and I am indeed honoured to get a recipe from her in her own words. Please enjoy this recipe.
What I love about this adobo recipe, aside that it’s so easy to prepare and easy to cook. In this recipe the meat is thoroughly seasoned. A very simple and ordinary dish that can be cook anytime Phillippine adobo can be chicken or squid adobo but Pork adobo is my favorite because I just love the tenderness of the pork and also that I am not much fan of chicken
Ingredients
1 1/2 lb. pork shoulder or butt cut in cubes
3 gloves garlic, minced
1 bay leaf
1/4 tsp.black pepper
1/2 c. water
2 tbsp. cooking oil
1/3 c. vinegar
2 tbsp. soy sauce
1 tsp. salt
2 tbsp brown sugar
½ cup water
How to make this dish
Combine all ingredients,except oil in casserole and let stand for 30 minutes.
Heat oil in skillet and stir the meat until becomes golden brown on all sides.
Add water.
Bring to boil then simmer, covered for at least 20 minutes.
When the juice is absorbed add another cup of water, cover and let simmer again until pork becomes tender and until the sauce slightly thickened.
Stir in a brown sugar to melt
Serve hot with brown rice
