Applesauce Nut Bread recipe
This is a classic quick bread recipe with applesauce and nuts. I use walnuts but the original recipe did call for pecans. I hate pecans so I substituted, but it is up to you. Really, any nuts will do.
INGREDIENTS
1 cup sugar
| 1/2 teaspoon baking powder

1 cup applesauce
| 1 teaspoon cinnamon
|
1/3 cup oil
| 1/4 teaspoon salt
|
2 eggs
| 1/4 teaspoon nutmeg
|
3 tablespoons milk
| 1 cup chopped nuts
|
2 cups flour
| 1/4 cup brown sugar
|
1 teaspoon baking soda
|
DIRECTIONS
Preheat oven to 350 degrees, use cooking spray on 8 1/2 inch loaf pan.
In large bowl, combine sugar, applesauce, oil, eggs and milk.
Stir together flour, baking powder and soda, 1/2 teaspoon cinnamon, salt and nutmeg.
Add flour mix to applesauce mix and beat until combined. Stir in 3/4 cup of nuts.
Pour batter into prepared loaf pan.
Combine brown sugar, rest of cinnamon and nuts. Sprinkle evenly over batter.
Bake for 1/2 hour. Cover loosely with foil and bake an additional 1/2 hour.
Remove from pan, cool on rack.
