BBQ Pork Fried Rice
Don’t throw away any of the left-over BBQ pork from yesterday, because you can use it to make another tasty meal with whatever you have around in the refrigerator Start saving your left over barbecue pork and start making a flavorful BBQ pork Fried Rice. Fried rice is a nice comfort food you can cook up with lots of rice and vegetables and have enough for a few meals or to feed a group of people.
There is something satisfying about being able to make a delicious meal out of left overs from a previous lunch or dinner. This recipe can be adjusted according to what you have on hand and the end result will be excellent, it takes many different flavors well. We love to use the remains of a roasted chicken from the supermarket to make chicken fried rice.

Ingredients for BBQ Pork Fried Rice
1/4 - 1/2 Red onion(chopped)
2-3 pcs. green onions(separate stem and leaves)
1/2 - 1 red bell pepper(chopped)
3 cloves garlic(chopped)
1-2 ½ cups of steam rice ( warm or cold is fine)
left-over barbeque pork chopped into 1/4 - 1/2" inch pieces
Your favorite Fried Rice seasoning Mix to make it super easy
1 beaten egg
2-4 tbsp of olive oil or any cooking oil
Feel free to add additional vegetables such as some finely chopped carrots, sugar snap peas, or even some corn to add depth to the recipe.
Substitute the pork with chicken, or shrimp, or go with an all veggie version if that is your preference.

Making BBQ Pork Fried Rice
1.Dissolve seasoning into 2 tbsp of water and set aside.
2.Heat up the skillet and add the olive oil or cooking oil.
3.Put garlic,red onion, stem of the green onions and red bell pepper, stir fry for 1 minute or until it is golden brown.
4.Add egg and scramble for 1 minute.
5.Add the steamed rice stir it well with all the ingredients for about 2 minutes.
6. Add the left-over BBQ pork and mix it up with the other ingredients.
7. Pour the fried rice seasoning in the skillet,stir and cook until well blended with other ingredients.
8. Garnish with green onion leaves.
9. Serve it hot and enjoy your meal with your family or friends.
We often eat fried rice just by itself or with a piece of fruit such as an apple. Feel free to always add whatever vegetables you have in the kitchen at the time, dicing up carrots really thin or celery or peas are other great options to include in a fried rice. An allvegetable version can also be a great way to enjoy homemade fried rice.
