Banana Bread Pudding Loaf
This recipe was invented in my kitchen many years ago. I was going for a low fat, low sugar banana bread. My daughter suggested using yogurt in place of butter or oil, so we tried it. The bread turned out good, tasted real good, but the consistency was more like a bread pudding, so that is why I call it, Banana Bread Pudding Loaf. It is just the right amount of sweet, mostly from the bananas, and goes good with a cup of coffee.
Ingredients
2 cups plain flour
2 Tsp baking powder
½ Tsp salt
2 large eggs
½ cup plain nonfat yogurt
½ cup sugar
¼ cup milk
2 Tsp vanilla extract
4 cups mashed embarrassed bananas (about 4 large bananas)
Instructions
1. Heat oven to 350 degrees
2. Grease and flour (or cooking spray) bottom and sides of a 9 by 5 by 3 loaf pan
3. In a bowl stir together flour, baking powder and salt
4. In a separate bowl combine eggs, yogurt, sugar, milk, and vanilla extract
5. Stir together with a fork or whisk until thoroughly mixed
6. To the wet ingredients stir in flour mixture and mashed bananas, adding each of these ingredients about ½ of the full amount at a time
7. Stir everything until combined thoroughly
8. Pour batter into the loaf pan
9. Put in the oven on a center rack
10. Bake at 350 degrees 45 minutes to 1 hour.
Cool down, slice and eat!
