Black Beans And Rice Recipe, A Cuban Favorite.
You have not lived until you have had real Black Beans and Rice made from an authentic Cuban Recipe. I learned this recipe in 1999 in Havana Cuba. It makes the most delicious Black Beans and Rice I have ever tasted. Try it and see how you like it. Post a comment below and let me know how it turned out for you.
You need 1 pound of black beans and you will want to wash them and look them carefully for rocks etc. Then you want to soak your black beans covered overnight at room temperature.
The next day drain your beans and fill to cover them again. Discard any beans that float after five to six minutes.
Now cover your beans again and bring them to a low boil. Reduce heat to medium low.
Now you will need a large skillet and in it you will want to place 2 tablespoons of olive oil. Into this skillet place.
1. 1 Cup Sweet Purple Onion Chopped Very Fine.
2. 2 Tablespoons Minced Fresh Garlic.
3. 6 Sweet Bell Peppers Seeded And Chopped Fine.
4. 1 Pound Pork Roast Chopped Up Very Fine.
5. 1 Tablespoon Salt.
6. 1 Tablespoon Ground Cayenne Pepper.
Cook stirring often until your onion is done. Then rake into your beans and stir well. Continue cooking your beans and now add in.
1 Tablespoon Cumin.
1. 1 Tablespoon Oregano.
2. 2 Tablespoons Pure Cane Sugar.
3. 2 Tablespoons Dark Rum.( Optional but gives a great earthy flavor )
4. 2 Tablespoons Regular Vinegar.
You want to cook until your beans are cooked and soft. Some people don't like the taste the dark rum gives the beans. Make it with and with out and choose for yourself. It is always included in Cuba.

You will want to chop green roasted bell peppers very fine along with white onion chopped very fine. When you get ready to put your black beans and rice together place a bed of rice on the plate and then pour a ladle of black beans over the rice. On top of this on each plate place a tablespoon of roasted green bell peppers and a tablespoon of onion. You have just made the most delicious Black Beans and Rice you will ever eat.
