Casseroles are terrific one dish meal ideas. There are many great ways to make delicious and interesting breakfast casserole recipes that everyone in your household will enjoy. These dishes are perfect for a hearty weekday breakfast, weekend brunch, or even a breakfast for dinner evening.

Baked Cheese Omelet Casserole

Ingredients:

  • 6 eggs
  • 3/4 cup milk
  • 6 slices Velveeta or American cheese
  • Hormel Real Bacon Bits (optional)

Cooking Instructions:

Preheat the oven to 350 degrees. Spray an 8 X 8 inch square baking dish with nonstick cooking spray. Line the bottom of the pan with cheese slices. Beat the eggs and milk, and pour into pan, covering cheese. Sprinkle with bacon, if using. Bake for 30 minutes. Allow to sit for 5 minutes before cutting.

Recipe Variations: You can sprinkle any of your favorite omelet toppings on the casserole, including ham, sausage, tomatoes, sautéed peppers, sautéed onions, sautéed mushrooms, jalapeno peppers, additional cheese, etc. You can also top the cooked omelet with your favorite tomato salsa.

Ham and Swiss Sour Cream Quiche

Ingredients:

  • 1 refrigerated pie crust
  • 1/2 pound of cooked, diced ham
  • 1 cup of shredded Swiss cheese
  • 4 eggs
  • 1 cup of sour cream (do not use fat free variety)
  • 1 cup whipping cream
  • Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375 degrees. Sprinkle ham and Swiss cheese in the bottom of the pie crust. Combine the eggs, sour cream, whipping cream, and salt and pepper in a mixing bowl and beat until well blended. Pour over ham cheese. Bake for approximately 30 - 40 minutes. Verify that the dish is ready by making sure that a knife inserted in the pie comes out clean.

Recipe Variations: You can make this recipe into a Quiche Lorraine by stirring in 1/2 cup of chopped spinach leaves. You can also substitute another breakfast meat for the ham, such as bacon, Canadian bacon, or crumbled cooked sausage.

Sausage and Egg Casserole

Ingredients:

  • 2 pounds sausage
  • 8 slices white bread
  • 12 ounces shredded cheddar cheese
  • 4 eggs
  • 2 1/2 cups milk
  • 1 tablespoon of prepared mustard
  • Salt and pepper to taste

Cooking Instructions:

Cube the slices of white bread, removing crusts if desired. Line a 9 X 13 casserole dish with bread cubes. Spread shredded cheddar on top of the bread. Brown and crumble sausage in a saucepan. Drain and spread over the cheese. Crack eggs into medium mixing bowl and beat lightly. Add milk, mustard, salt, and pepper. Pour over the top of the casserole. Bake at 350 degrees for an hour. This can be prepared a day ahead of time. Simply cover and refrigerate before baking.
