Quick and Easy Meal Ideas: Breakfast for Dinner

Having breakfast for dinner reminds me of being a kid. When I was little, my mom prepared pancakes and bacon almost every Sunday evening. These days, when I'm looking for a quick and easy "comfort food" dinner idea, I generally whip up an evening meal based on traditional breakfast foods.

Pancakes

When having pancakes for dinner, I typically pair homemade pancakes with bacon, sausage, or ham (or sometimes all three!).

Pancake Recipes

I have to admit that I always use a mix to make pancakes. It isn't difficult to make pancakes from scratch, but I find that keeping a box of my favorite whole wheat pancake mix in the pantry means that I'm always just a few minutes away from a great meal.

I do vary the way I prepare pancakes from time to time. I simply prepare the batter per the package directions, and then add additional items to the batter or use creative toppings.

Pancake Batter Add-ins

  • Chopped ham
  • Chopped pecans
  • Cooked sausage (crumbled)
  • Fresh blueberries

Pancake Toppings

  • Apple pie filling
  • Blueberry pie filling
  • Butter and Syrup
  • Cherry pie filling
  • Fresh strawberries and whipped cream
  • Fried apples (sliced fresh apples sautéed in butter and cinnamon)
  • Orange marmalade

Breakfast Burrito

Breakfast burritos are a great meal any time of the day or night. They are easy and convenient whether you have time to sit down and enjoy dinner or if you need to eat on the run.

Breakfast Burrito Recipe

I typically make sausage, egg, and cheese burritos.

Ingredients:

1 roll breakfast sausage

4 large eggs

8 ounces shredded cheese (cheddar, Colby, or similar)

Salt and pepper to taste

4 tortillas

Non-stick cooking spray

Instructions:

Cook the sausage in one package directions. When the sausage is almost ready, spray another pan with nonstick cooking spray. Break the eggs into the pan and sprinkle with salt and pepper. Scramble until they are fully cooked and reach the desired consistency. Turn the stove burner off. Fold the drained sausage and shredded cheese into the eggs. That is all there is to making breakfast burrito filling. Simply spoon the filling into the tortillas, fold, and enjoy!

  • Scrambled eggs
  • Waffles

    Pancakes! Growing up as a child we NEVER had anything for dinner other than meat and 3 veg.

    But now I delight when my husband makes pancakes for dinner - I wonder if I could persuade him to cook them tonight!
