Cranberry Casserole Bread recipe
Cranberries are a rich source of fiber, vitamin C and some anti-oxidants. This bread is not made in a loaf pan, but a 1 1/2 quart casserole.
INGREDIENTS
3/4 cup sugar
| 3/4 cup orange juice

2 teaspoons baking powder
| 1 tablespoon grated orange rind
|
1/2 teaspoon baking soda
| 2 well beaten eggs
|
2 cups + 1 tablespoon flour
| 1 cup chopped cranberries
|
1 teaspoon salt
| 1/2 cup chopped candied green cherries
|
1/4 cup shortening
|
DIRECTIONS
Preheat oven to 350 degrees.
Combine 2 cups flour,sugar, baking powder, baking soda and salt. Cut in shortening until mix resembles coarse cornmeal.
Combine orange juice, rind and eggs. Pour into the dry ingredients. Mix just enought to dampen.
Dust chopped cranberries and cherries with 1 tablespoon flour, so they won't stick together. Fold carefully into batter.
Use cooking spray on 1 1/2 quart casserole dish. Pour batter into dish.
Bake for 1 hour, or until toothpick inserted in center comes out clean. Cool for 1o minutes and frost with icing.
ICING INGREDIENTS AND DIRECTIONS
Cream 3 tablespoons margarine with 2 cup confectioners sugar and 1/8 teaspoon salt. Mix thoroughly. Add 1 teaspoon vanilla extract and 3 tablespoons warm milk. Beat until fluffy.
