Cucumber and Onion Salad

This is a tasty, light, and delicious summer salad. It is a great picnic salad. It is delicious served with grilled food. Cucumbers are abundant in the summer and this makes it an excellent choice for a cook out food.

Yields: Several Servings


  • 3 cucumbers, sliced thin (seedless is better)
  • 2 small red onions, sliced thinly
  • to taste salt and pepper
  • 1/3 cup sour cream
  • 1/4 cup white sugar
  • 1/3 cup white vinegar


  1. Slice up the cucumbers, leaving green skin. Put salt on them. Toss and let them sit in the refrigerator for an hour wrapped in paper towels.
  2. Rinse the cucumbers and let them drain.
  3. Put the cucumbers and the onion in a medium size bowl.
  4. In a small bowl mix vinegar, sugar, and sour cream. Pour over the cucumbers and onions.
  5. Chill the salad for at least 4 hours. Serve chilled. Yummy!
