Meatballs, The way Mama Makes Them
This easy recipe for spicy meatballs will be a treat at any dinner party. You can serve them as a main course or add them to your favorite tomato sauce and serve with spaghetti. Spaghetti and meatballs is one of my all time favorite dishes, I remember as a kid that was my favorite dinner item, and I could not wait to dig in. My mom made the best spaghetti and meatballs ever and this is her secret meatballs recipe. Now it's not such a secret anymore since I am sharing it with all the wonderful people at Hubpages.
1 pound lean ground beef
1/2 cup crushed corn flakes
1/2 cup evaporated milk
1/4 cup chopped onions
1/4 cup chopped green chiles
1 tablespoon worcestershire sauce
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 teaspoons hot pepper sauce (optional)

In a large bowl combine ground beef, corn flakes, evaporated milk, onions, chili sauce, worcestershire sauce, salt, pepper, and hot pepper sauce. Mix everything together well. With wet hands shape the mixture into 16 meatballs. Place meatballs on a ungreased baking pan. Bake uncovered at a temperature of 400 degrees for about 20 minutes. Make sure they are lightly brown on the outside and cooked medium on the inside. Enjoy !
Why Not Make Homemade Pasta To Go With Mama's Meatballs
Homemade pasta is cheap to make, and is simply delicious. Mama always made homemade pasta to go with her meatballs. All you need to make homemade pasta is eggs, flour, and water. Homemade pasta is so much better than store bought. So do yourself a favor and spend the extra time making it yourself.
Making Your Homemade Past Dough
In a large bowl mix all your ingredients together. That would be one cup of flour and one egg. Put just enough cold water to pull all your ingredients together to form a ball. Next place your dough ball on a well floured cutting board or counter top. If the dough tries to stick, add more flour. Now use a rolling pin to start flattening out your dough. Be liberal with the flour if sticking occurs. Roll it out till it is about as thick as a dime. The dough is now rolled out and it is time to cut our noodles. Fold the dough from either side to it meets in the middle. Use a sharp knife and start cutting strips.
How To Cook Your Pasta
Slide your knife under the noodles, and lift, and the should separate nicely.
Add a bit more flour and lightly toss the noodles so that they don't stick together.
Too cook, drop the noodles in a pot of boiling salted water. How much salt? Enough so that it tastes salty. You can cook your noodles right away or you can keep them in the fridge. Pasta only take four or five minutes to cook.
Mama's Homemade Spaghetti Sauce
2 teaspoons olive oil
1 medium onion, chopped
2 tablespoons garlic, minced
2 (15 ounce) cans tomato sauce tomatoes if you like chunks of tomatoes)
1 (6 ounce) can tomato paste
1 teaspoon dried oregano
1 teaspoon dried rosemary
3/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon sugar
Put the olive oil in the pan first, then add the onion and garlic and saute till the onion is soft and the kitchen smell like garlic. I loved the smell of the house when mama was cooking spaghetti and meatballs. Next add all of your other ingredients and stir them in completely. Simmer until sauce thickens. Combine your meatballs with your sauce and simmer a little bit longer. Next put all of the goodness on top of your homemade pasta. bon apetit !
