Busy Day Fish and Fruit Salsa Dinner

This is easy and takes very few ingredients. So, stop at the store and pick these up on the way home from work. Here is what you will need:

~ 2 Fish fillets

~ 1 Can of Tropical Fruit Salad

~ 1 can green chiles, mild (or hot if you want but hot overpowers the mildness of the fish)

~ 1 lime

~ Brown rice

~ 1 onion or clove of garlic (in case you don't have these at home)

Here is how simple this flavor packed dish is to make.

After you get home and kick off your shoes; The first thing you do is start the rice cooking. Use the liquid from the canned Tropical Fruit to cook the rice in. You will need to supplement the fruit juice with water in order to have enough liquid to cook the rice. Add a pinch of salt.

While the rice is cooking. Chop the Tropical Fruit into slightly smaller pieces, add the WHOLE can of green chiles, and some chopped onions (about 2 t.) and a generous squeeze of lime (one whole lime), and a pinch of salt. Refrigerate this while the rice cooks.

Now go check your email and change your clothes. Then come back and set the table and make drinks. We like fruit tea. Something stronger is fine too!

When the rice is cooked you may then begin fixing your fish. Cook the fish per instructions. Add one t. of chopped onion and 1 chopped small clove of garlic to the top of the fish. If you fry the fillets you will have dinner in a few minutes. If you bake the fish you have time to enjoy your drink and watch some news.

This is a great summer dish. The fruity rice is refreshing. The fish is light. The Green Chile Tropical Fruit is unique and delicious.

Healthy, easy, fast, and not too pricey, what more could we want? Ummm…someone to do the dishes?
