Super Delish Gluten & Dairy Free PB Cookies
I have recently found out by my doctor that I have a gluten sensitivity and I'm trying my best to create new recipes that are gluten free but also delicious! I am also lactose intolerant so I have to create dairy free options as well, which can be quite a challenge! I know trying to adjust to a new diet is difficult, especially when you have to turn it into a lifestyle, but we can go on this journey together and be successful! Gluten Free Peanut Butter Cookie Recipe
Lets start off with the ingredients...
2/3 cup of gluten free quick cooking oats
1 TSP of baking soda
1 cup of Peanut Butter
2 eggs
1/2 cup of white or semi sweet chocolate chips, whatever you prefer
Directions:
Preheat the oven to 350 degrees.
Start by mixing the oatmeal and baking soda together in a small bowl. Then you will combine the peanut butter, eggs and chocolate chips together. Slowly mix the peanut butter combination with the oatmeal mix. Drop by the spoonful on a greased baking sheet, and bake for 10 minutes. YES its really that simple! Enjoy your gluten free and dairy free cookies, they are wonderful!
