Grandma Matkin's Oatmeal Cookies

Ingredients

Preheat the oven to 375

1 cup Margarine

1 Cup Sugar

1 Cup Brown Sugar

2 Eggs

2 Cups Flour

1 tsp Salt

1tsp Baking soda

1tsp Baking Powder

1tsp Cinnamon

2 Cups Quick Oats

1Cup Oats

1 Cup Apple Butter

1-2 tsp Grated Orange Peel

1-2tsp Grated Lemon Peel

Directions

Mix together 2 Cups Flour, 1tsp Salt, 1tsp Baking Powder, 1tsp Baking Soda and 1tsp Cinnamon.

In a large bowl blend Margarine, White and Brown Sugars. Mix in the eggs. Add the Flour combination 1/3 at a time.

Mix in Oatmeal, nuts and Apple butter (or applesauce, pumpkin, sweet potato, etc.) and grated orange and lemon peel (if desired).

Line cookie sheets with Parchment paper and drop batter by rounded tsp 2 inches apart.

      The addition of the apple butter would seem to make this a most delicious recipe indeed. Nothing like the home-baked cookie!
