Grandmas' Beef Vegetable Soup Recipe

Updated on February 1, 2010

I love to cook and learned from two of the best cooks I know, My grandma and my mother. My grandma could make a feast out of anything. I eventually picked up on her habit on never measuring anything and to this day I still don't. I do it all by eye. So far, like my grandma I have never had any complaints.

I'll try to give you a general ingredient amount in making my soups so you will have a place to start. Soups have become my specialty. I love to make them and comming up with different recipes. They are very versatile and will hit the spot all year long. Truthfully it's hard to mess up a soup but it does take a bit of know how in blending the right ingredients so here I'd like to share some of my favorite recipes.

Grandmas'  Beef Vegetable Soup

Fill a large soup kettle, about 6 to 8 quarts half full of water Put in...

1 medium beef roast with fat

1 large onion diced

Salt ,Pepper and Garlic to taste

Cook till the meat falls apart

Then add 1 half head of cabbage chopped

3 cups each of diced potatoes and carrots

2 cans each of green beans and corn

Add 1 64oz. can of tomatoe juice to remaining water and simmer

Cook till the potatoes and carrots are tender.

(for a thicker soup I like to use tomato paste instead of juice)

I hope you enjoy this.
