There are so many great cheeses out there that most of us will never try then all. Here are some of the "fine" ones that I recommend and think you will like.

Here is my "must try" list.
My favorite first!-
Fontinella- Not to be confused with Fontina, Fontinella is a milder, softer relative of parmasian . It is bold and has a great aroma and texture. Fantastic at tasting or wine and cheese parties.This one is inexpensive, so try it in salads too. Mostly found in wedges,if wrapped in plastic, smell it. If it has aged well it will smell good and strong! If so, it's a keeper.
Also from Italy- Asiago , is a very tangy cheese that goes good with most things. I has a kick to it.
From Ireland-
Dubliner- I actually just tried this and I loved it plain. This is unique and usually imported. You probably won't find it in large quantities, but a little is so good!
Aged Irish Whiskey Cheddar- This you can find a whole wheel of, especially in March. I have never had it but hear that it is outstanding.
Porter- A unique cheese with a great texture and design. I like the flavor but what caught me about this is the fact that it is the one cheese, most pleasing to the eye. This is a must for all St. Pat's Parties!
From Denmark-
Havarti This one is creamy and has a mild flavor and a great after taste.
From Norway-
Bergenost Being that it is Norwegian, you can image that it is rich, buttery and different from most. This is nice in sauces as well.
From England-
White Stilton with Cranberries- Pleasing to the eye and though it's expensive, I like the flavor. It's definitely worth it for a treat now and then.
Chive and Onion The bands I am familiar with are loaded with chives and are very tasty. Great for sandwiches and soups.
Welch Cheddar So strong it knocks the kilt off of a Scotchman! lol This is a strong and bold cheese, even for cheddar!
Spain-
Manchego Not as spicy as you would think. A great Wheat Thin or Triscut type of cracker.
USA!
There are a lot of cheeses from and made in America. Peppadew is a flavorful cheese packed with sweet red peppers. This is good for any occasion and most uses.
