Looking for a recipe for the Holiday leftovers? “The Cupboard Drawer Recipe Book” is full of them and here is one given to Dorothy by her friend Helen McGettrick for the leftover Ham you might have from Thanksgiving or Christmas; or for that matter Easter, Graduations, or just the occasional Big Sunday Meal. No matter which occasion it was for, when we had a big ham on Sunday we knew Ham Balls were gonna happen on Wednesday or Thursday. 1 lb Ground Ham
1 ½ lbs ground Pork Sausage
2 cups Dry Bread Crumbs
2 eggs well beaten
1 cup Milk
1 cup Brown Sugar, packed
1 tsp dry mustard
½ cup Cider Vinegar
½ Cup Water
Preheat Oven to 325 F / 163 C
- In a mixing bowl, combine the Ham, Pork, Bread Crumbs, Eggs, and Milk; mix thoroughly. Form into Golf Ball size balls and place in a baking pan.
- In a mixing bowl, combine the Brown Sugar, Mustard, Vinegar, and Water. Stir until the sugar dissolves; pour over the ham balls.
- Bake in the preheated oven for 1 hour, basting frequently.
Yield: 16 – 20 Meat Balls
Some Serving suggestions: These go exceptionally well with Au Gratin Potatoes, and green beans; or Hash Browns and Peas. I highly recommend both.
