Health Wise: Three Bean Salad Recipe
Three bean salad has been a popular picnic and barbecue side dish since at least the 19th century. It is easy to make and a good bring-along dish because it requires little refrigeration. This recipe also makes a filling and healthy main dish.
Beans pack a huge nutritional punch. They are high in soluble fiber which helps lower cholesterol, and are excellent source of protein, iron and complex carbohydrates.
Ingredients
1 can each black beans, light red kidney beans, and white navy beans
1/2 orange bell pepper, thinly sliced
1/2 yellow bell pepper, thinly sliced
1/4 red onion, thinly sliced
10-12 grape tomatoes, quartered
2 tbsp. olive oil
salt and pepper to taste
Combine all ingredients in a large bowl. Cover and refrigerate 1 hour before serving.
Serves 6 to 8 as side dish, or 3 to 4 as a main dish.
