Jalapeno cheese Meatloaf
Not your Mama's meatloaf!
This isn't your Mama's meatloaf (that is unless her name is Maria or Lupe)! It's much better! You be the judge!
The Ingredients
1 and a half tbs. olive oil ( or cooking oil).
1 large onion chopped
three quarter cup chopped sliced mushrooms ( or 4 oz. canned mushrooms).
half tbs. minced garlic ( or a quarter tbs. garlic powder.
half tsp. salt , half tsp.pepper.
1 cup of grated jalepeno cheese.( can use any cheese)
1tbs. chili powder
2lbs. ground beef
To be reserved for topping
2 tbs. salsa sauce
1 tbs. ketchup
1 quarter cup jalepeno cheese ( can use any cheese)
Cooking instructions
Put the olive oil in a preheated pan. Saute the onions, when they become almost transparent add the garlic. Then add in the mushrooms and cook until they have reduced down.,
When fully cooked remove the pan from the heat. Combine all off the remaining ingredients (except the topping ingredients) into a large mixing bowl, combine well. Add the onion mixture into the bowl mix in well.
In a 5 x 9 loaf panthat has been sprayed well with butter Pam add all of the ingredients from the mixing bowl, pat it down level and put into a 350 degree preheated oven for one hour or until done.
After about 20 minutes pull the loaf out and drain off the fat.
At the 45 minutes of cooking, pull it out again drain off the fat, mix the salsa and ketchup together and spread it over the top, with the back of a spoon. Top with the remaining cheese, and put it back in the oven for the remaining 15 minutes. When done remove and let rest 5 minutes.
