Easy Vegetarian Recipes

.Vegetarian recipes can include a variety of healthy whole grain breads including pita bread, and an assortment of favorite veggies .Pita bread pocket sandwiches are easy to make and delicious to eat. You can include a slice of low fat cheese along with the vegetables. Lather mustard or mayo on these pocket sandwiches, and the whole family will enjoy munching for lunch, dinner or snack. These litle pita pockets are filled with nutritious ingredients, so you can pat yourself on the back for giving your family and yourself a healthful and delicious sandwich. I always keep a package of pita pockets in the freezer for last minute meals.

Some Ingredients

Black Beans
Black Beans


  • 6 Pita bread pockets
  • One cup chopped celery
  • One cup chopped tomatoes
  • One cup chopped cucumbers
  • Two cups Cooked brown rice
  • Two cups Grated cheddar or jack cheese
  • One cup Chopped black olives
  • One cup Black beans
  • One-half cup spicy mustard
  • Salt and pepper to taste
  • Avocado, optional

Cook Time

Prep time: 30 min
Ready in: 30 min
Yields: 6 pita pockets for six people


  1. Lay out the pita pockets ready to fill
  2. Spread spicy mustard in both insides of the pita pocket.
  3. Add two tablespoons of the vegetable mixture in each pocket.
  4. Add 1/4 cup of rice in each pocket
  5. Add two tablespoons of black olives in each pocket
  6. Add three tablespoons of the cheese and beans in each pocket
  7. Add more of any of the vegetables, rice, beans or cheese as desired.
  8. Sprinkle with salt and pepper to taste.
  9. Add chopped avocado for extra taste

Serving Suggestions

      This looks amazing and really filling on a chilly November day like today. I love soup and sandwiches for lunch or dinner and these made with Pita bread and filling look delicious. Lovely pictures and great idea for switching from plain bread.

      This is a great sandwich. It looks so good with the tomato soup. I make an easy homemade tomato soup and shall pair it with your sandwich. I will use vegan cheese or leave it off. Thanks for the great recipe. I love that it has protein also.

      I knew I shouldn't have skipped breakfast this morning! This hub made me hungry, and a pita bread sandwich with most of your ingredients (skipping the rice, but substituting about two tablespoons of cooked chopped potato) sounds great!
