Grow Your Own Sweet Potatoes

Originally I started making mashed sweet potatoes for Thanksgiving. I love sweet potatoes so now I make them throughout the year as well, even when there isn't a special occasion. I created this variation myself.

In addition to being perfect for Thanksgiving, this is a great side dish for most meat entrees. I frequently serve the potatoes with these pork chops and a simple vegetable side.

All of my ingredient measurements are approximate. Feel free to adjust to your own tastes. I used real salted butter, regular sour cream, and fat free skim milk.

Cook Time

Prep time: 5 min
Cook time: 40 min
Ready in: 45 min
Yields: 4-6 servings

Ingredients

  • 3 medium-large sweet potatoes
  • 4 tablespoons butter
  • 2 generous tablespoons sour cream
  • 2 tablespoons milk
  • 1 teaspoon cinnamon

Instructions

  1. Fill a large pot with water. Start the boiling process while you scrub and peel the potatoes.
  2. Add the potatoes to the pot. Cover. When the pot starts to boil, turn the heat to medium and crack the lid.
  3. Boil for 20-25 minutes or until you can easily stick a fork all the way through the potatoes.
  4. Drain. Mash the potatoes with a fork. Add the butter, sour cream, milk, and cinnamon. Beat with a hand mixer until the mixture is creamy.
  5. Turn the heat to low and stir until heated through. Serve immediately. Can't finish it all at once? It makes a wonderful leftover, too.
Enjoy!

Thanks, Crystal! You're right that many people use brown sugar in their sweet potatoes. I think that the sour cream and cinnamon combination is a refreshing change.

Yum. This sounds great! I like that it doesn't contain brown sugar, a common ingredient in sweet potatoes recipes.

This recipe sounds delicious! I love sweet potatoes, but the only time I make them is for Thanksgiving. My husband won't eat sweet potatoes. However, his dad loves them, so I always make them when we go to his dad's for Thanksgiving. I am definitely trying your recipe this year. Voting up and useful. May I share this on my Around the World with Recipes Blog? :)

      lcbenefield, thanks!

danfresnourban, that's a great question. I haven't come across any particular combinations yet that haven't worked. This sweet potato recipe is pretty simple, but if you make it significantly sweeter, I would be more careful about the flavors that you pair with it.

This does sound delicious. Is there any dish that you would not pair mashed sweet potatoes with that would work with regular mashed potatoes?
