Melt in your Mouth Sugar Cookies
My mom passed this recipe on to me and I have been making them for years and always with rave reviews. These sugar cookies are melt-in-your-mouth delicious! The recipe is simple to whip up and everyone will think you spent hours baking these amazing cookies.
Sugar Cookies
- 1 cup butter or margarine softened
- 1 cup oil
- 1 cup granulated sugar (plus extra to roll in)
- 1 cup powdered sugar
- 1 t. vanilla
- 2 eggs
- 1 t. baking soda
- 1 t. cream of tartar
- 1 t. salt
- 4 cups flour (add extra flour if needed)
Mix dry ingredients in a bowl and set aside. In a seperate bowl, thouroughly mix oil, granulated sugar, powdered sugar and butter. Add vanilla and eggs and mix well. Next add dry ingredients and blend well. If mixture is too sticky, add more flour as needed.
At this point, I refrigerate the dough for about 30 minutes.
Preheat oven to 350 degrees.
Roll 1 t. dough (I use a cookie scoop) into a ball and roll ball in granulated sugar. Place on a lightly greased cookie sheet. Using the bottom of a glass, smash the cookie to about 1/4 of an inch in thickness. I put my glass into the sugar between cookies to keep them from sticking to the bottom of the glass.
Bake for 10-12 minutes or until golden around the edges.

If, by chance, you have any left, store in an airtight container. They usually disappear as quickly as they are made!
