Here is a great recipe for people who have a hugh amount of Cabbage and a little time to make the old fashion Cabbage rolls. This recipe was one of my mother's Jean favorite recipes. I hope you are all willing to try this.

Mock Cabbage Rolls
1 small head coarsely chopped Cabbage
1/4 tsp. pepper
1 small onion chopped
1 egg
1 1/2 lb. ground Beef
1/2 tsp. Salt
1/2 cup Rice
1 Large can tomato juice or tomato sauce
1 Small can sauerkraut (opt.)
Mix meat, rice, onion, salt, pepper, egg and enough juice to moisten.
Arrange a layer of Cabbage and sauerkraut in bottom of Casserole then add a layer of meat mixture. Repeat with a layer of Cabbage and then meat. End with cabbage and kraut on top. Pour tomato juice over until layers are covered. Bake at 350* for about 2 1/2 hours or until Cabbage is done. (Start at 400* then turn to 350*). Layer it in with Saucerkraut.
