Oyster Recipes
Oysters are delicious seafood!
Oysters are one of my favorite seafoods to eat. If you have never tried them, you do not know what you are missing. They are light in texture and extremely flavorful. Enjoy homemade oyster stew and the other wonderful and delicious recipes.
Oyster Stew:
Ingredients:
1 pint fresh oysters with liquor
1/2 cup fresh onion, finely chopped
1/2 cup crisp celery, finely chopped
1 stick butter
1 quart whole milk (use part half-and-half for richer stew)
seasoned salt to taste
pepper to taste
celery salt to taste
Prep:
First shuck the oysters and keep on ice. Next drain the oysters and save the natural liquor and then carefully remove any shell particles.
In a large saucepan, add in and sauté the onion and celery in 2 tablespoons of the butter, until they are very soft and transparent. Next add the milk and the rest of the butter. Slowly heat the milk, but do not bring to a boil. Add the oyster liquor, salt, pepper, and celery salt. In a separate pan, heat the oysters for 2 minutes or more, just until they curl at the edges. Add the oysters to the stew 2 minutes before serving.
