Chicken and Pasta With A Twist

Ingredients
- 1 plb chicken breast, sliced diagonally
- 1 cup red roasted peppers, sliced diagonally
- 1 cup or can spinach
- 2 cloves garlic, chopped very small
- 1 plb linguini, cooked al dente
- 2 teaspoons olive oil
- 3 teaspoons fresh squeezed lemon
- salt, to taste
- pepper, to taste
- optional crushed pepper, to taste
- 1/2 cup fresh parsley

Take a 5 qt pot and put the water on for linguini . What you want to do, is try to time everything so that it will finish cooking relatively at the same time. While you are waiting for you water to boil, you could prep your chicken by slicing it diagonally, put it to the side. Slice up your peppers, put to the side and chop up your spinach and put that to the side. Chop up garlic , and then chop up your parsley . saute up your garlic in the oil in a 10-12' skillet. Place your chicken in the pot and make sure you saute all sides, for about 8 minutes, Make sure the chicken is cooked well, add red peppers and saute another 5 minutes, last add the spinach and saute another 2 to 4 minutes. In between remember to put pasta in water when it boils and keep stirring it. When the pasta is done, pour it in the colander to drain pasta. pour the pasta back into big pot, add your chicken mixture. Add Salt, Pepper, 2 teaspoons of oil, and lemon. add your parsley. You have a beautiful, colorful dish in which to serve.
You can make a salad with Lemon and Oil and salt and pepper,
also it would be real nice to serve hot bread with it.
