Recipe For Thai Chicken Green Curry
Introduction & Ingredients
In this article, I will be explaining to you simple ways to prepare Thai Green Chicken Curry. It is also known as Kaeng Khiao Wan Kai.
Here are the ingredients:
1 whole skinless chicken breast, slice into bite-sized
2 tbsp Thai green curry paste
2 cup of coconut milk
1/2 cup of water
2 tbsp Thai fish sauce
1 tbsp brown sugar
1/2 cup of Thai small green eggplant or 1 aubergine, diced
7-8 kaffir lime leaves, torn
A handful of fresh basil, washed and stalk removed
1 long red finger chilly, de-seeded and sliced length way
Heat up 1/2 cup of the creamy part of the coconut milk in a saucepan in medium heat until it become slightly oily. Add green curry paste and stir well until blended. Add sugar, fish sauce and kaffir leaves, stir for further minutes. Turn to high heat, add the chicken, stir and pour in to the coconut milk bit by bit and sit thoroughly. Transfer into a pot and add all the remaining coconut milk and water. Stir well before closing the lid and boil for 10 minutes before adding small green eggplant or aubergine. Reduce to simmering for 15 minutes, add basil leaves, stir and server hot in a big bowl. Drifted slice red chillies for garnish and always serve with steamed rice.
