Sauerkraut Salad
This recipe is just what the doctor ordered to take to a picnic in addition to the traditional macaroni or potato salad. The instructions for preparing it are easy and It doesn't take any time to make.
The taste is sweet and sour and the diced vegetables give it a nice crunchy consistency. It is similar to another favorite linguini salad without the Italian seasonings.
Bring this salad to a casserole supper and it was always a favorite at the Women's Club luncheons.
Ingredients
- 1 large can Sauerkraut, rinsed and drained
- 1/2 cup Vinegar
- 1/2 cup Oil
- 1-1/2 cups Sugar
- 1 cup Celery, chopped
- 1 Green Pepper, chopped
- 1 small Onion, chopped
Instructions
- Combine all ingredients in a Tupperware container.
- Marinate overnight in the refrigerator
- Stir before serving
Alternatives
If you wish you can use the bags of sauerkraut instead of from the can. Rinse and drain before using.
You can pre-purchase a combination of chopped celery, onion and green peppers at the market to save time.
My son just recently bought me a vegetable chopper which will take a lot of the work out of the chopping for this recipe and many other that use chopped vegetables in the ingredient list.
